Z’Tejas Offers Summer Lunch: Healthy, Robust

Z’Tejas Southwestern Grill has your summer planned with a low-calorie, high-taste lunch menu.

A premier dining destination for Mexican and South-western style cuisine since 1989, the first Z’Tejas opened in a Victorian home on historic Sixth Street in downtown Austin, the company headquarters. In the Valley, Z’Tejas welcomes guests to its Phoenix location, Tatum and Shea boulevards, and Chandler, Ray Road and 54th Street.

“The new Z’Fresh lunch menu reflects the principles Z’Tejas was founded on,” says Dan Santos, director of operations. “After crafting these freshly-prepared, cleverly-seasoned dishes using local ingredients, we are confident our guests will love these additions.

“Our summer menu focuses on healthy and flavorful, with options for everyone, including those following vegan and vegetarian diets,” he adds, noting that the seasonal selections will continue through the fall. “The lunch menu features modern techniques, fresh flavor combinations and interesting ingredients.”

Lunch items include the Southwest Vegan Quinoa Bowl, with tricolored quinoa, spinach, black beans, bell peppers, onions, corn, avocado and salsa fresca. This menu flexes to your taste. Want to add cilantro chicken or skirt steak or salmon at additional charges? Just ask your Z’Tejas server.

That’s true for the other lunch salads, too, such as the Arugula and Apple Salad, with tomato, pecans, crumbled goat cheese and agave vinaigrette; Kale: carrots, blueberry, strawberry, apple, pecan, goat cheese and lemon vinaigrette; the Caprese: arugula, tomato, mozzarella, onion, fresh basil and bruschetta vinaigrette; and Kale and Brussels Sprouts, with tomato, bell pepper, onion, cilantro, feta, balsamic glaze and raspberry vinaigrette.

Those wanting other than a salad can choose the Grilled Turkey Burger: mushroom, bell pepper, shallot, garlic, cream, cilantro aioli, lettuce, tomato, onion served with sweet potato fries, and the Shrimp and Spiral Vegetable Pasta with zucchini, yellow squash, tomato, spinach, cilantro shrimp and Parmesan cheese.

The restaurants are open for brunch Saturday and Sundays, 10 a.m. to 3 p.m.

For brunch, enjoy the Chilaquiles: corn chips, spicy tomato sauce, Jack cheese, two eggs your way and borracho beans; Z’Eggs, two cage-free eggs any style, with bacon or sausage and Southwestern hash browns; Eggs Benedict with Green Chile Hollandaise, English muffin, Canadian bacon and poached eggs; and Chicken Fried Chicken & Waffles, crispy, double-breaded fried chicken with creamy country gravy, topped with fresh-baked Belgian-style waffles and chocolate-covered strawberries and served with homemade vanilla bean syrup.

And, all week you can still order from the standard menus at Z’Tejas for lunch and dinner and enjoy happy hour specials.

Starters such as the Blackened Catfish Tacos are available, with Southwestern slaw, jalapeño tartar, avocado, corn tortilla strips, Asian sauce and flour tortilla; and entrées include the Tejas Asada: Skirt Steak, orange, lime, cilantro, jalapeño, garlic, avocado, borracho beans and Southwestern rice.
